Instructions
- Start by slicing the chicken, bell peppers, and onion into thin strips. Set aside. In a small bowl, mix chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper to create your fajita seasoning.
- Place the chicken strips in a large bowl, drizzle with 1 tablespoon of olive oil, and sprinkle with the fajita seasoning mixture. Toss to coat evenly. Let it marinate briefly—about 10 minutes—for more flavor.
- Preheat your oven to 400°F (200°C). Spread the seasoned chicken, bell peppers, and onions on a large baking sheet lined with parchment paper. Drizzle with the remaining 1 tablespoon of olive oil.
- Roast in the preheated oven for 20-25 minutes, tossing halfway through, until the chicken is cooked through and veggies are tender. Finish by squeezing lemon juice over the mixture and garnishing with freshly chopped cilantro.
