Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Cream butter and brown sugar until light and fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients, alternating with apple cider, beginning and ending with dry ingredients.
- Stir in chopped apples.
- Spoon batter onto prepared baking sheets and flatten slightly.
- Bake for 12-15 minutes or until edges are golden. Cool completely.
- Fill with vanilla cream before serving.
Notes
- Chill the filling for a firmer texture. You can add caramel sauce for extra flavor.
