- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn kernels
- 1 can diced tomatoes with green chilies
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 4 cups beef broth
- Shredded cheddar cheese
- Sour cream
- Fresh cilantro and sliced green onions for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and garlic; cook until translucent.
- Stir in taco seasoning and cook for 1 minute.
- Add black beans, corn, diced tomatoes with green chilies, and beef broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Serve hot, topped with shredded cheese, sour cream, cilantro, and green onions.
Notes
- You can substitute ground turkey or chicken for beef.
- Adjust spice levels by adding hot sauce or more green chilies.
- Best enjoyed with tortilla chips or bread on the side.
