- 2 pounds beef stew meat, cubed
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Olive oil for browning
Instructions
- Brown the beef cubes in a skillet with olive oil until seared. Transfer to slow cooker.
- Add chopped vegetables, garlic, herbs, salt, and pepper to the slow cooker.
- Pour in beef broth, cover, and cook on low for 6-8 hours or until meat is tender.
- Adjust seasoning and serve hot garnished with fresh herbs.
Notes
- For thicker stew, add a slurry of cornstarch and water during the last 30 minutes of cooking.
- You can substitute vegetables as per availability.
