- 1 pound boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 cup orzo pasta
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with Cajun seasoning, salt, and pepper.
- Cook chicken until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, sauté bell peppers and garlic until tender, about 3 minutes.
- Add orzo pasta and cook, stirring, for 2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes or until orzo is cooked and liquid is absorbed.
- Return chicken to skillet, stir to combine, and heat through.
- Garnish with chopped green onions before serving.
