- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until tender, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in broth and add diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Garnish with fresh parsley before serving.
Notes
For a creamier texture, blend a portion of the soup and stir back into the pot. Feel free to add cooked pasta or beans for extra heartiness.
