- 1.5 pounds boneless, skinless chicken thighs, cut into chunks
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place chicken, carrots, celery, onion, garlic, potatoes, thyme, rosemary, bay leaf, salt, and pepper into the slow cooker.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
- Remove bay leaf before serving and adjust seasoning as needed.
Notes
For extra flavor, add a splash of white wine or a sprinkle of chopped parsley before serving. Make sure to remove the bay leaf for a better taste experience.
