- 1 lb ground turkey
- 2 large sweet potatoes, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Line a baking dish with parchment paper and brush with 1 tablespoon olive oil.
- Spread sliced sweet potatoes evenly in the dish.
- In a skillet, heat remaining olive oil over medium heat. Add diced onion and garlic; sauté until translucent.
- Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- Spread the cooked turkey mixture over the sweet potatoes.
- Bake for 25-30 minutes until the edges are crispy and sweet potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- You can substitute turkey with chicken or beef for variation.
- Add shredded cheese on top during the last 5 minutes for a cheesy finish.
