- 1 pound ground turkey
- 2 large sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until translucent.
- Add ground turkey, paprika, chili powder, salt, and pepper. Cook until browned and cooked through.
- Add diced sweet potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Transfer mixture to a baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes until sweet potatoes are tender and top is slightly crispy.
- Garnish with chopped parsley and serve hot.
Notes
- For a touch of heat, add chopped jalapeños or a dash of cayenne pepper.
- You can top with shredded cheese or a dollop of sour cream before serving.
