- 1 pound ground beef
- 1 small onion, chopped
- 3 cups beef broth
- 1 can (14. oz) diced tomatoes with green chiles
- 1 packet taco seasoning
- 8 ounces rotini pasta
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, chopped cilantro, sliced jalapenos
Instructions
- In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
- Transfer the cooked beef and onion to the crockpot.
- Add beef broth, diced tomatoes with green chiles, and taco seasoning to the crockpot. Stir well.
- Cover and cook on low for 4 hours.
- Remove lid and stir in uncooked pasta.
- Cover and cook on high for an additional 30-40 minutes, or until the pasta is tender.
- Sprinkle shredded cheddar cheese over the top and let melt before serving.
- Garnish with optional toppings such as sour cream, cilantro, or jalapenos.
Notes
- You can substitute ground turkey or chicken for beef for a lighter option.
- Adjust spice level by adding more or less green chiles or taco seasoning.
- For a creamier texture, add a splash of heavy cream or cream cheese before serving.
