- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted unsalted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3/4 cup sour cream
- 4 oz dark chocolate, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- Raspberry glaze (optional)
Instructions
- Preheat oven to 325°F (160°C). Mix cookie crumbs and melted butter, press into the bottom of a springform pan. Bake for 10 minutes.
- Beat cream cheese and sugar until smooth. Add sour cream, melted chocolate, vanilla, and mix well.
- Add eggs one at a time, blending thoroughly. Pour over crust.
- Bake for 55-60 minutes until set. Cool completely.
- Top with fresh raspberries and raspberry glaze if desired. Chill for at least 4 hours before serving.
