Ingredients
Scale
- 4 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 shots of espresso or 2 tablespoons of instant espresso powder
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- Mash the bananas in a large bowl until smooth. Mix in melted butter and sugar until well combined.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract and brewed espresso or espresso powder.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, stirring gently until just combined. Fold in chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
- Optionally add chopped nuts like walnuts or pecans for added texture.
- For vegan adaptation, substitute eggs with flaxseed or chia seed mixture and use dairy-free chocolate chips.
- Avoid overmixing the batter to ensure the bread stays moist and tender.
