  • Total Time: 1 hour 10 minutes
  • Yield: 1 loaf

Ingredients

Scale
  • 4 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 shots of espresso or 2 tablespoons of instant espresso powder
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
  2. Mash the bananas in a large bowl until smooth. Mix in melted butter and sugar until well combined.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and brewed espresso or espresso powder.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, stirring gently until just combined. Fold in chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for maximum sweetness and flavor.
  • Optionally add chopped nuts like walnuts or pecans for added texture.
  • For vegan adaptation, substitute eggs with flaxseed or chia seed mixture and use dairy-free chocolate chips.
  • Avoid overmixing the batter to ensure the bread stays moist and tender.
