  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup caramel sauce
  • 3 oz semi-sweet chocolate, chopped
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until combined. Press into the bottom of a 9-inch springform pan to form the crust.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating after each addition. Mix in vanilla and sour cream.
  3. Fold in flour, caramel sauce, and chopped chocolate until well combined.
  4. Pour the batter over the crust and smooth the top. Bake for 60-70 minutes, until the center is set.
  5. Allow to cool completely, then refrigerate for at least 4 hours. Before serving, drizzle with extra caramel and garnish with chocolate shavings.
