- 1.5 pounds boneless, skinless chicken breasts or thighs, cut into chunks
- 3 tablespoons unsalted butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1 cup heavy cream
- 1/2 cup tomato sauce or crushed tomatoes
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Heat 2 tablespoons of butter in a large skillet over medium heat.
- Add chicken pieces and cook until golden brown and cooked through. Remove and set aside.
- In the same skillet, add remaining butter and sauté diced onion until translucent.
- Add garlic, cumin, paprika, and turmeric; cook for 1 minute until fragrant.
- Pour in tomato sauce and heavy cream, stirring well. Simmer for 5 minutes until sauce thickens.
- Return cooked chicken to the skillet, stir to coat in the sauce, and simmer for an additional 5 minutes.
- Season with salt and pepper. Garnish with chopped herbs before serving.
Notes
- For extra flavor, add a splash of lemon juice or cayenne pepper.
- Serve with rice, naan, or crusty bread.
