- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 2 cups spinach leaves
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and Italian seasoning, then sear until golden brown, about 4-5 minutes per side.
- Remove chicken and set aside. In the same skillet, add garlic and cook until fragrant.
- Add chicken broth, heavy cream, and bring to a simmer. Stir in orzo, cherry tomatoes, and spinach.
- Return chicken to skillet, spoon some sauce over the top, and sprinkle with cheese.
- Bake in the preheated oven for 20-25 minutes until chicken is cooked through and cheese is bubbly.
