- 4 boneless, skinless chicken breasts
- 4 large potatoes, peeled and diced
- 4 cloves garlic, minced
- 1 cup grated parmesan cheese
- 1 cup heavy cream

- Fresh parsley, chopped (for garnish)
Instructions
- Place diced potatoes in the crockpot and drizzle with olive oil. Season with salt, pepper, and Italian seasoning.
- Add chicken breasts on top of the potatoes and season with salt and pepper.
- Mix minced garlic, heavy cream, and grated parmesan cheese together. Pour over the chicken and potatoes.
- Cover and cook on low for 6-8 hours, until chicken is tender and potatoes are cooked.
- Shred chicken slightly with a fork if desired or serve whole. Garnish with chopped parsley before serving.
