  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound potato gnocchi
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Chopped fresh chives for garnish

Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove bacon and set aside.
  2. In the same pot, add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions, about 3-4 minutes.
  6. Reduce heat to low and stir in heavy cream, butter, and shredded cheddar cheese until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Return cooked bacon to the pot and stir well.
  9. Serve hot, garnished with chopped chives.
