Ingredients

- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 1 cup sharp cheddar cheese, shredded
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Chopped fresh chives for garnish
Instructions
- Cook the chopped bacon in a large pot over medium heat until crispy. Remove bacon and set aside.
- In the same pot, add diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat to low and stir in heavy cream, butter, and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Return cooked bacon to the pot and stir well.
- Serve hot, garnished with chopped chives.
Notes
- You can substitute the bacon with turkey bacon for a lighter version.
- For added vegetables, include diced carrots or celery during the onion cooking step.
- Store leftovers in an airtight container for up to 2 days and reheat gently.
