- 1 pound Italian sausage
- 1 small onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 (9-ounce) package cheese tortellini
- 1 cup chopped spinach or kale
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh parsley, chopped for garnish
Instructions
- Heat a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon.
- Add chopped onion and garlic; cook until softened and fragrant.
- Pour in chicken broth and bring to a boil.
- Stir in Italian seasoning, salt, and pepper.
- Add tortellini and cook according to package instructions until al dente.
- Stir in chopped spinach or kale and cook until wilted.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with grated Parmesan and chopped parsley.
Notes
- You can substitute sausage with ground turkey or chicken for a lighter version.
- Add a splash of cream or a dollop of pesto for extra richness.
