- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice and zest of 1 large lemon
- 1/2 cup crumbled feta cheese
- 2 cups chicken or vegetable broth
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook orzo in broth according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp to skillet, cook until pink and opaque, about 3-4 minutes per side.
- Stir in lemon juice, zest, and cooked orzo. Mix well.
- Top with feta cheese and garnish with parsley before serving.
Notes
For added flavor, include a pinch of red pepper flakes or chopped basil. Serve with a side of steamed vegetables or a fresh salad for a complete meal.
