- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1/4 cup all-purpose flour
- 3 cloves garlic, minced
- 1/2 cup fresh lemon juice
- 1/4 cup chicken broth
- 1/4 cup unsalted butter
- 2 teaspoons lemon zest
- Fresh parsley, chopped, for garnish
Instructions
- Season the chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in lemon juice and chicken broth, scraping any browned bits from the bottom of the skillet.
- Add butter and lemon zest, stirring until sauce is smooth and slightly thickened.
- Return chicken to the skillet to coat with sauce. Simmer for 2-3 minutes.
- Serve hot, garnished with chopped parsley and additional lemon zest if desired.
