- 8 ounces of your favorite pasta (penne, fusilli, or spaghetti)
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook the pasta in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; cook until fragrant, about 30 seconds.
- Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Add spinach and cook until wilted, about 1-2 minutes.
- Combine cooked pasta with the vegetable mixture. Toss well to coat.
- Season with salt and pepper to taste. Top with grated Parmesan cheese if desired.
- Serve immediately garnished with additional Parmesan or fresh herbs if desired.
Notes
- You can add cooked chicken or shrimp for extra protein.
- For a dairy-free version, skip the Parmesan cheese.
