Ingredients

  • 1 lb (450g) ground beef
  • 4 large potatoes, sliced thinly
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Wash and slice the potatoes into thin rounds; chop the onion and mince the garlic.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Add ground beef, season with salt, pepper, smoked paprika, and thyme, cooking until browned. Remove excess fat and set aside.
  3. Preheat oven to 375°F (190°C). In the same skillet, add another tbsp olive oil and sauté onions and garlic until translucent.
  4. Layer sliced potatoes on the bottom of the skillet or an oven-proof dish. Spread half of the cooked beef over the potatoes, sprinkle with cheese, then repeat with remaining ingredients. Pour diced tomatoes evenly on top.
  5. Transfer the skillet to the oven and bake uncovered for 40-45 minutes until potatoes are tender and top is golden brown. Garnish with chopped parsley before serving.
