- 4 large russet potatoes, diced
- 1 pound smoked sausage, sliced
- 1 packet ranch seasoning mix (1 ounce)
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup chopped fresh parsley (optional garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown.
- Add sliced smoked sausage to the skillet and cook for another 5-7 minutes until browned and heated through.
- Sprinkle ranch seasoning mix over the potatoes and sausage, stirring well to coat evenly.
- Reduce heat to low, sprinkle shredded cheddar cheese on top, and cover. Cook for 2-3 minutes until cheese melts.
- Garnish with chopped parsley if desired and serve hot.
Notes
- You can substitute sweet potatoes for russet potatoes for a sweeter flavor.
- For extra heat, add red pepper flakes to the seasoning mix.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
