Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, combine melted butter and brown sugar and stir until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  3. Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to wet ingredients and stir until just combined.
  4. Gently fold in chopped strawberries, lemon zest, and lemon juice.
  5. Pour batter into the prepared pan, spreading evenly. Bake for 25-30 minutes or until edges are golden and a toothpick comes out clean.
  6. Allow to cool for at least 20 minutes. Remove from pan, cut into squares, and optionally dust with powdered sugar before serving.
