- 1 cup unsalted butter, melted
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup fresh strawberries, chopped
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a large bowl, combine melted butter and brown sugar and stir until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to wet ingredients and stir until just combined.
- Gently fold in chopped strawberries, lemon zest, and lemon juice.
- Pour batter into the prepared pan, spreading evenly. Bake for 25-30 minutes or until edges are golden and a toothpick comes out clean.
- Allow to cool for at least 20 minutes. Remove from pan, cut into squares, and optionally dust with powdered sugar before serving.
Notes
- Use fresh strawberries for the best texture, but frozen can be used if thawed and drained.
- Avoid overbaking to keep blondies moist and tender.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Freeze for longer storage.
