Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Mix cinnamon and sugar in a shallow dish; set aside.
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil. Remove from heat and stir in flour until dough forms. Let cool slightly.
- Add eggs one at a time, mixing well after each, until smooth. Stir in vanilla extract.
- Transfer dough to a piping bag fitted with a large star tip. Pipe 1-inch strips or dollops onto the baking sheet. Alternatively, use a spoon to form small mounds.
- Bake for 15-20 minutes until golden brown and crispy. Let cool slightly.
- While warm, roll in cinnamon-sugar mixture until coated. Serve immediately.
