- 4 large sweet potatoes, peeled and cubed
- 1 lb (450g) of your favorite honey garlic sausage, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 teaspoon paprika (optional for added flavor)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by peeling and cubing the sweet potatoes into evenly sized pieces. Toss with 1 tablespoon olive oil, salt, pepper, and paprika if using. Set aside.
- Heat a large skillet over medium heat. Add the sliced sausage and cook until browned and crispy around the edges, about 5-7 minutes. Remove from skillet and set aside.
- Add remaining olive oil to the same skillet. Add sweet potato cubes and cook for 10-15 minutes, stirring occasionally, until tender and caramelized.
- Stir in minced garlic and cook for 1 minute. Pour in honey, stir to coat, and cook for an additional 2 minutes.
- Return cooked sausage to the skillet, mix well, and cook for another 2-3 minutes until heated through. Garnish with parsley if desired. Serve hot.
