  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 large sweet potatoes, peeled and cubed
  • 1 lb (450g) of your favorite honey garlic sausage, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1 teaspoon paprika (optional for added flavor)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by peeling and cubing the sweet potatoes into evenly sized pieces. Toss with 1 tablespoon olive oil, salt, pepper, and paprika if using. Set aside.
  2. Heat a large skillet over medium heat. Add the sliced sausage and cook until browned and crispy around the edges, about 5-7 minutes. Remove from skillet and set aside.
  3. Add remaining olive oil to the same skillet. Add sweet potato cubes and cook for 10-15 minutes, stirring occasionally, until tender and caramelized.
  4. Stir in minced garlic and cook for 1 minute. Pour in honey, stir to coat, and cook for an additional 2 minutes.
  5. Return cooked sausage to the skillet, mix well, and cook for another 2-3 minutes until heated through. Garnish with parsley if desired. Serve hot.
