Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the sweet potato slices on the baking sheet and brush lightly with olive oil. Season with salt and pepper.
- Roast for 20-25 minutes until tender and crispy around the edges.
- Remove from oven and transfer to a serving platter.
- Top each slice with crumbled feta cheese and drizzle with honey.
- Garnish with fresh herbs if desired and serve warm or at room temperature.

- For extra flavor, add a sprinkle of chili flakes or fresh thyme before roasting.
- You can prepare the sweet potato rounds ahead and assemble just before serving.
