Instructions
- In a mixing bowl, whisk together the ricotta cheese, honey, and vanilla extract until smooth and creamy.
- Gently fold in the chopped pistachios, ensuring even distribution.
- Using a spoon or cookie scoop, portion and roll the mixture into small balls. Alternatively, press into silicone molds.
- Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
- Optional: Drizzle additional honey or sprinkle more pistachios on top before serving.

- Store in an airtight container in the refrigerator for up to 3 days.
- Can be frozen for up to 1 month for longer storage.
