Ingredients
Scale
- 2 cups of fresh ripe peaches, peeled and sliced
- 1 ½ cups all-purpose flour
- 1 cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- Mix the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
- Cream the softened butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the sliced peaches without breaking the fruit.
- Pour the batter into the prepared pan and smooth the top. Optional: sprinkle additional brown sugar on top for caramelization.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Cool slightly before serving.
Notes
- Use ripe peaches for optimal sweetness and flavor.
- Adjust the amount of brown sugar for desired sweetness based on fruit ripeness.
- Do not overmix after adding wet and dry ingredients to keep the cake moist.
- Experiment with toppings like nuts or caramel sauce for added flavor.
