Ingredients

  • 1 pound boneless chicken breasts, sliced
  • 1 tablespoon Cajun seasoning
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 ounces pasta (penne or fettuccine)
  • 1 red bell pepper, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning and cook until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté onion and bell pepper until tender. Add garlic and cook for another minute.
  4. Pour in heavy cream and chicken broth, bringing to a simmer. Let it thicken slightly.
  5. Return the chicken to the skillet, stir, and cook for 2-3 minutes. Toss in cooked pasta, mix well.
  6. Season with salt and pepper. Garnish with fresh parsley before serving.
