- 2 tablespoons olive oil
- 1 pound boneless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces pasta (penne or fettuccine)
- 1 red bell pepper, sliced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning and cook until browned and cooked through. Remove and set aside.
- In the same skillet, sauté onion and bell pepper until tender. Add garlic and cook for another minute.
- Pour in heavy cream and chicken broth, bringing to a simmer. Let it thicken slightly.
- Return the chicken to the skillet, stir, and cook for 2-3 minutes. Toss in cooked pasta, mix well.
- Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
- Adjust spice level by adding more Cajun seasoning for extra heat.
- For a lighter version, substitute heavy cream with half-and-half.
