An easy and flavorful vegetarian pasta dish featuring large shells filled with spinach and ricotta cheese, baked with marinara sauce and melted cheese.

Ingredients

  • 20 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup chopped fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta shells in boiling salted water until al dente, drain and set aside.
  2. In a bowl, combine ricotta, spinach, garlic, salt, and pepper.
  3. Preheat oven to 375°F (190°C).
  4. Fill each shell with the ricotta mixture and place in a baking dish.
  5. Spread marinara sauce over the shells, then top with mozzarella and Parmesan cheeses.
  6. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

  • You can prepare the filling ahead of time and assemble the shells before baking.
