- 2 cups cooked orzo pasta
- 3 cups cooked and shredded chicken
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). In a skillet, heat olive oil and sauté onions and garlic until caramelized, about 15 minutes.
- Mix cooked orzo, shredded chicken, caramelized onions, butter, thyme, salt, and pepper in a large bowl.
- Transfer the mixture into a greased baking dish. Top with shredded mozzarella and Parmesan cheeses.
- Bake uncovered for 20-25 minutes until bubbly and golden brown on top.
- Garnish with chopped parsley before serving.
Notes
- Use store-bought caramelized onions for convenience.
- For extra flavor, add a splash of white wine to the onions while sautéing.
- Can be prepared ahead and baked later.
