- 2 lbs beef stew meat, cubed
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat and brown the beef cubes. Transfer to slow cooker.
- In the same skillet, sauté onions and garlic until fragrant. Add curry powder, turmeric, and cumin, cooking for 1 minute.
- Pour the sautéed spices and onion mixture over the beef in the slow cooker.
- Add coconut milk, carrots, bell pepper, salt, and pepper. Stir well.
- Cover and cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro before serving.
Notes
- You can add potatoes or peas for extra flavor and texture.
- Adjust the spice level to your preference by adding more curry powder or chili flakes.
