- 2 packs ramen noodles (discard seasoning)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon grated ginger
- Optional: sesame seeds for garnish
Instructions
- Cook ramen noodles according to package instructions, drain and set aside.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in garlic and ginger; cook for 30 seconds until fragrant.
- Add sliced bell peppers and snap peas; stir-fry for 3-4 minutes until tender-crisp.
- Pour in soy sauce and sesame oil; toss to coat evenly.
- Add cooked noodles to the skillet; toss everything together and heat through for 2 minutes.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- Adjust soy sauce to taste for saltiness.
- Feel free to add chili flakes for a spicy kick.
- Use pre-cooked chicken for an even faster meal.
