Ingredients
Scale
- 1 ½ cups whole wheat flour
- 1 cup cottage cheese
- 2 tablespoons olive oil
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: chopped herbs (parsley, cilantro, or dill)
- Water or milk as needed to form the dough
Instructions
- Start by mixing the whole wheat flour, baking powder, and salt in a large bowl. Add the cottage cheese and olive oil, then gradually stir in water or milk until you form a soft, elastic dough. Knead gently for 2-3 minutes, then cover and let it rest for 10 minutes.
- Divide the dough into equal portions and roll each into thin circles using a rolling pin on a lightly floured surface. The thinner, the better for that perfect flatbread texture!
- Heat a non-stick skillet or cast-iron pan over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown spots appear. For a crispier texture, bake in a preheated oven at 375°F (190°C) for 8-10 minutes.
Notes
- Ensure the dough is kneaded gently to achieve a soft texture.
- Adjust the amount of water or milk as needed for optimal dough consistency.
- You can add chopped herbs for extra flavor.
- Store leftovers in an airtight container or freeze for longer storage.
