Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 2 cups beef or chicken broth
- 1 cup milk or cream
- 1 ½ cups shredded cheddar cheese
- Optional toppings: pickles, bacon, chopped tomatoes, green onions
- Salt and pepper to taste
Instructions
- Begin by heating a high-quality nonstick skillet with olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking up the meat. Season with salt and pepper. Remove excess fat if necessary.
- In the same skillet, add diced onions and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add the uncooked orzo pasta, stir to coat, then pour in the broth and milk. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until the orzo is tender and liquid absorbed.
- Remove from heat and stir in shredded cheddar cheese until melted and creamy. Adjust seasoning as needed. Garnish with optional toppings like chopped pickles, bacon, or green onions if desired.
Notes
- Use freshly grated cheese for best melting and flavor.
- Incorporate your favorite toppings like bacon, pickles, or chopped tomatoes for extra flavor.
- For a healthier version, opt for low-fat cheese and leaner ground meat.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk or broth to maintain creaminess.
