- 2 lbs beef chuck roast, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or cauldron over medium heat.
- Sear beef chunks until browned on all sides, then remove and set aside.
- Sauté onions and garlic until fragrant.
- Add carrots, potatoes, thyme, rosemary, salt, and pepper; cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and bring to a boil.
- Reduce heat to low, cover, and simmer for 2 to 3 hours until beef is tender and flavors meld.
Notes
- You can add mushrooms or turnips for extra flavor.
- Ideal to serve with crusty bread or dinner rolls.
