Ingredients

- 8 ounces of your favorite pasta (penne, fusilli, or rotini)
- 2 cups cooked chicken breast, diced or shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumbers, olives, red onion, and parsley.
- Drizzle with olive oil and lemon juice, then sprinkle with dried oregano.
- Toss gently to evenly combine all ingredients.
- Add salt and pepper to taste and sprinkle feta cheese on top if desired.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- For extra flavor, add roasted red peppers or artichoke hearts.
- Use a variety of your favorite Mediterranean ingredients to customize the salad.
- This salad can be prepared a few hours in advance and stored in an airtight container in the refrigerator.
