Instructions
- Preheat your oven to 400°F (200°C). Mix garlic, olive oil, oregano, thyme, smoked paprika, salt, and pepper in a small bowl to create a marinade. Pat the chicken dry and coat with the spice mixture. Arrange chicken, zucchini slices, and cherry tomatoes on a large sheet pan.
- Roast in the oven for about 25-30 minutes, or until the chicken is cooked through and vegetables are tender. Baste the chicken with pan juices halfway through cooking for added flavor.
