- 4 boneless, skinless chicken breasts
- 2 zucchinis, sliced
- 1 cup cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Heat 1 tablespoon olive oil in a large ovenproof skillet over medium heat.
- Season chicken breasts with salt, pepper, oregano, and basil.
- Sear chicken for 3-4 minutes on each side until golden brown.
- Add garlic, zucchini, cherry tomatoes, and remaining olive oil to the skillet.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- You can add olives or feta cheese for extra flavor.
- Serve with crusty bread or a side salad for a complete meal.
