- 1 cup pure maple syrup
- 1/2 cup unsalted butter
- 1 large egg
- 2 cups all-purpose flour

- 1 cup white chocolate chips or melts

Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a saucepan, melt butter with maple syrup over medium heat. Let cool slightly.
- In a bowl, whisk egg into the cooled maple mixture. In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, stirring until combined.
- Drop teaspoons of dough onto baking sheets, spacing apart. Bake for 10-12 minutes until edges are golden.
- Cool cookies on wire racks. Melt white chocolate in a microwave or double boiler.
- Dip half of each cookie into white chocolate and place on parchment. Decorate with sprinkles if desired.
- Allow chocolate to set before serving or gifting.
