Ingredients
Scale
- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup melted unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- For the cinnamon swirl:
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash ripe bananas until smooth. Add sugar, melted butter, eggs, and vanilla extract. Whisk until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
- Mix brown sugar and ground cinnamon to prepare the cinnamon swirl.
- Pour half of the banana batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over it. Add the remaining batter on top, then sprinkle with the rest of the cinnamon sugar. Gently swirl with a knife or skewer for a marbled effect.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use overripe bananas for maximum sweetness and flavor.
- Avoid overmixing the batter to keep the bread tender and moist.
- For added crunch, top with chopped nuts like walnuts or pecans.
- Add a tablespoon of sour cream or yogurt for extra moistness.
