- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
Instructions
- Season chicken breasts with salt, pepper, and dried thyme.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Pour in balsamic vinegar and honey, stirring to combine.
- Reduce heat to low and simmer the sauce for 3-4 minutes until it thickens slightly.
- Return chicken to the skillet, spooning the balsamic glaze over the top.
- Add cherry tomatoes and spinach around the chicken, cooking for another 2-3 minutes until tomatoes soften and spinach wilts.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a thicker sauce, cook longer until reduced to your desired consistency.
- You can substitute chicken thighs for breasts for juicier results.
- Great served with rice, mashed potatoes, or a fresh side salad.
