Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach

Instructions

  1. Season chicken breasts with salt, pepper, and dried thyme.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in balsamic vinegar and honey, stirring to combine.
  6. Reduce heat to low and simmer the sauce for 3-4 minutes until it thickens slightly.
  7. Return chicken to the skillet, spooning the balsamic glaze over the top.
  8. Add cherry tomatoes and spinach around the chicken, cooking for another 2-3 minutes until tomatoes soften and spinach wilts.
