- 1 cup unsalted butter, chilled and diced
- 4-5 tablespoons ice water
- 6-8 large apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
- 3/4 cup sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix the flour, salt, and sugar. Cut in the chilled butter until the mixture resembles coarse crumbs.
- Add ice water gradually, mixing until the dough comes together. Divide into two disks, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 425°F (220°C). Roll out one dough disk on a floured surface to fit a 9-inch pie plate.
- In a bowl, combine sliced apples, sugar, cinnamon, nutmeg, and lemon juice. Pour filling into the prepared crust.
- Roll out the second dough disk and place over the filling. Trim and crimp edges. Cut slits in the top crust for steam to escape. Brush with beaten egg.
- Bake for 45-50 minutes until golden and bubbly. Cool before serving.
