  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced

  • 6-8 large apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix the flour, salt, and sugar. Cut in the chilled butter until the mixture resembles coarse crumbs.
  2. Add ice water gradually, mixing until the dough comes together. Divide into two disks, wrap in plastic, and chill for at least 1 hour.
  3. Preheat oven to 425°F (220°C). Roll out one dough disk on a floured surface to fit a 9-inch pie plate.
  4. In a bowl, combine sliced apples, sugar, cinnamon, nutmeg, and lemon juice. Pour filling into the prepared crust.
  5. Roll out the second dough disk and place over the filling. Trim and crimp edges. Cut slits in the top crust for steam to escape. Brush with beaten egg.
  6. Bake for 45-50 minutes until golden and bubbly. Cool before serving.
