Instructions
- Prepare the blueberry sauce by simmering ½ cup of blueberries with 1 tablespoon honey until they burst and create a thick syrup. Let it cool slightly.
- Mix the yogurt base by combining 2 cups of Greek yogurt, vanilla extract, and remaining honey or maple syrup until smooth.
- Layer and swirl by adding a tablespoon of yogurt into each mold, then a teaspoon of blueberry sauce. Use a toothpick to gently swirl the sauce into the yogurt.
- Freeze the molds for 3-4 hours or until firm. Garnish with fresh mint leaves before serving.
