- 2 large sweet potatoes, sliced
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice sweet potatoes into thin rounds and toss with 1 tablespoon olive oil, salt, and pepper. Arrange in a baking dish.
- In a skillet, heat remaining olive oil over medium heat. Add chopped onion and minced garlic; cook until fragrant.
- Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- Spread cooked turkey mixture over sweet potatoes in the baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake uncovered for 25-30 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.

- Adjust seasoning according to taste.
- Can be made ahead and baked later.
- Use sweet potatoes of uniform thickness for even cooking.
