  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes into thin rounds and toss with 1 tablespoon olive oil, salt, and pepper. Arrange in a baking dish.
  3. In a skillet, heat remaining olive oil over medium heat. Add chopped onion and minced garlic; cook until fragrant.
  4. Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
  5. Spread cooked turkey mixture over sweet potatoes in the baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake uncovered for 25-30 minutes until cheese is melted and bubbly.
  8. Garnish with fresh parsley before serving.
