Ingredients

- 1.5 pounds boneless, skinless chicken breasts
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place all ingredients except parsley into the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks and stir to combine.
- Serve hot, garnished with chopped fresh parsley.
Notes
- You can add peas or green beans in the last 30 minutes for extra vegetables.
- For a thicker stew, mash some potatoes before serving.
