Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 package (9 oz) refrigerated tortellini
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the sausage over medium heat until browned, then remove and set aside.
  2. Add chopped onion to the pot and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Pour in chicken broth and diced tomatoes; bring to a simmer.
  5. Add the cooked sausage back to the pot, then add tortellini and cook according to package instructions, about 3-5 minutes.
  6. Stir in chopped spinach until wilted.
  7. Season with salt and pepper, then serve hot topped with grated Parmesan and fresh parsley.
