- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned, then remove and set aside.
- Add chopped onion to the pot and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and diced tomatoes; bring to a simmer.
- Add the cooked sausage back to the pot, then add tortellini and cook according to package instructions, about 3-5 minutes.
- Stir in chopped spinach until wilted.
- Season with salt and pepper, then serve hot topped with grated Parmesan and fresh parsley.
Notes
- For a spicy kick, add red pepper flakes during sautéing.
- You can substitute spinach with kale or arugula for different greens.
- Use gluten-free tortellini for a gluten-free version.
