  • 1 lb smoked sausage, sliced
  • 6 large russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix (or homemade ranch)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 tbsp butter, melted
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by boiling the peeled and cubed potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
  2. In a large skillet, sauté the sliced smoked sausage over medium heat until browned and crispy, about 5-7 minutes. Remove from heat and set aside.
  3. In a bowl, combine the ranch seasoning mix, sour cream, milk, and melted butter. Stir until smooth and well-blended. Season with salt and pepper as needed.
  4. In a large mixing bowl, toss the cooked potatoes with the ranch mixture until evenly coated. Add the cooked sausage and half of the shredded cheese. Mix gently.
  5. Transfer everything into a greased baking dish. Top with the remaining cheese and bake at 375°F (190°C) for 20-25 minutes, or until bubbly and golden brown.
