- 1 lb beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 potatoes, diced
- 1 cup green beans, chopped
- 4 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef chunks and cook until browned. Remove and set aside.
- In the same pot, add onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
- Return beef to the pot. Add potatoes, green beans, beef broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer covered for 1.5 to 2 hours until beef is tender and flavors meld.
- Adjust seasoning as needed. Serve hot with crusty bread.
Notes
- You can add other seasonal vegetables like peas or corn for variation.
- For a thicker soup, mash some potatoes before adding or add a tablespoon of tomato paste.
