Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup green beans, chopped
  • 4 cups beef broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef chunks and cook until browned. Remove and set aside.
